This easy rhubarb cake recipe is one to make as soon as the first tender rhubarb stalks appear in the garden.
1½ cup brown sugar
½ cup shortening
2 eggs
pinch of salt
1 tsp. baking soda
1 t. vanilla
1 cup buttermilk
1½ cups rhubarb
2 cups flour
Spread batter in a 9 x 13" greased pan...or round layer cake pan , then mix topping:
½ cup sugar
1 t. cinnamon
1 cup chopped walnuts
Sprinkle on the topping and bake at 325° for 45 minutes.
You will be able to taste rhubarb recipes in some Minnesota restaurants. Look for jars of rhubarb jam in specialty shops.
4 cups of rhubarb, sliced
2 cups strawberries, diced
1 1/2 cups sugar
1/4 cup flour
Mix the rhubarb, strawberries, sugar and flour and place in a greased 9" baking dish.
Combine topping ingredients:
1 cup graham cracker crumbs
1/3 cup flour
1/4 cup sugar
2 tsp. cinnamon
Melt 5 T. butter and stir into the crumbs until well moistened. Spread topping mix evenly over fruit mixture and press down slightly.
Bake Strawberry Rhubarb Crisp in a 400 degree F. oven for 45 minutes or until browned on top.
Rhubarb Recipe Books and IdeasWhen we think of rhubarb recipes, we most often think of rhubarb pie. Here are a couple of our favorite rhubarb pie recipes:
4 cups rhubarb, unpeeled and diced
1 Tbls. butter
1 tsp. orange rind, grated
1/4 cup flour
2 9" unbaked pie crusts
2 cups sugar
Preheat oven to 450 degrees F. Line a 9" pie pan with one of the pie crust shells. Mix filling ingredients together and pour into the pie crust. Top filling with the second pie crust shell.
Cut several slashes in the upper crusts, then seal the two crusts around the edges. Bake for 10 minutes, reduce oven temperature to 350 degrees and bake about 20 minutes longer.
2 cups rhubarb, cut into 1/2 inch pieces
2 eggs, slightly beaten
1 cup sugar
2 tablespoons flour
1/8 teaspoon salt
1/2 cup whipping cream
Combine rhubarb, eggs, sugar, flour, and salt. Pour into an unbaked 10-inch pie shell. Pour whipping cream over the top. Bake at 375 degrees for 10 minutes, then reduce heat to 350 degrees and bake for another 50 minutes.
