Maple Syrup Recipes

Make these tasty Minnesota maple syrup recipes with the maple syrup you made yourself or with the best grade of locally grown Minnesota maple syrup.

Maple syrup recipes We love maple syrup on our waffles, French toast and bowls of oatmeal. Minnesota maple syrup also adds special flavor in baked squash, ham, baked beans and many other dishes.

Maple syrup in drinks and with fruit dishes is delicious. Dark amber syrup is often used for cooking but use whatever you have. Here are some of our favorite maple syrup recipes. Minnesota blueberries and Minnesota maple syrup recipes...what a combination!

Blueberry Maple Mousse

6 egg yolks
1 pint heavy cream
3/4 cup maple syrup, heated
1 pint blueberries

Beat egg yolks in a bowl or the top of a double boiler until thickened. Slowly beat in hot syrup. Cook over simmering water, beating constantly, until slightly thickened. Cool.

Beat cream until it forms stiff peaks and fold into the yolk mixture. Fold in half of the berries. Pour into 1 1/2 qt. mold. Freeze overnight. Before serving, garnish with remainder of berries.

Maple Syrup Apple Pie

Crust:

3 cups flour
dash almond extract
1/2 cup ice water
1 cup sugar
1/2 stick Crisco (Butter Flavor)
1 stick butter


Form two balls and refrigerate while making filling.

Filling:

6 cups Apples (Granny Smith, sliced)
1 cup maple syrup
dash nutmeg
7 shakes cinnamon
3-4 TBsp. flour

Fill crust with apple mixture and bake at 375 degrees for 50-60 minutes,

*Add even more of a "Minnesota touch" by using Minnesota grown apples with your maple syrup recipes.

Maple Grilled Grapefruit

2 grapefruit cut in half
1/4 cup maple syrup
4 tbsp. melted butter
dash cinnamon
handful golden raisins

Combine syrup, butter, and cinnamon, and spread over the cut half of each grapefruit (You may want to cut each section free before broiling). Sprinkle raisins on top. Place on broiler pan about 4" below flame and broil 2-4 minutes. Serve hot.


Maple Sherry Fruit

1/2 Cup maple syrup
1/2 cup orange juice
2 Tablespoons dry sherry
4 Cups assorted fresh fruit, cut in chunks

In medium bowl, combine all ingredients. Chill for several hours and serve with *Maple Whipped Cream (Below)

Maple Whipped Cream

In small mixer bowl, beat 1/2 pint whipping cream and 1/4 cup maple syrup until stiff.


Maple Syrup Graham Bread

2 Cups all-purpose flour
2 Teaspoons baking powder
2 Teaspoons baking soda
1 Teaspoon salt
2 Cups whole wheat flour
2 eggs, room temperature
1 1/2 cups buttermilk, room temperature
1/2 Cup sour cream, room temperature
1 1/2 Cups pure maple syrup

In a large bowl, blend together the white flour, baking powder, baking soda and salt.

Measure and stir in whole wheat flour.

In a small bowl, beat the eggs and blend in the buttermilk, sour cream and maple syrup.

Pour this liquid mixture into the dry ingredients and stir well.

Grease and line, with greased waxed paper, two 8 1/2" x 4 1/2" loaf pans

Pour or spoon batter into prepared loaf pans.

Bake in a 325 degree oven for 1 hour (40 minutes in a convection oven)

Test for doneness.


Maple Glazed Salmon

Salmon fillets for four
2/3 cup melted butter
1/2 tbsp. dried dill
1/2 cup maple syrup
1/4 cup Dijon style mustard

Blend ingredients over low heat until melted together. Grill or broil salmon, basting and turning until flaky and done.

This is one of our favorite maple syrup recipes; we fish in Alaska every summer and the combination of wild Alaskan salmon and maple syrup glaze is amazing.


Maple Baked Chicken

4 Chicken breasts
1 1/2 Cup maple syrup
1 1/2 Cup apple cinnamon oatmeal
1/2 Cup walnuts
Salt and pepper

  • In a food processor or blender combine oatmeal and walnuts, blend into a fine consistency.
  • Place mixture in one bowl, in a separate bowl pour the syrup.
  • Salt and pepper the chicken breasts.
  • Cover the chicken breasts in syrup making sure all areas are covered.
  • Then roll them in the oat mixture to achieve a breading type process.
  • Place in a greased baking dish and bake in a 350 degree oven for 35-45 minutes or until chicken is cooked throughout.

Roast Pork With Maple Peanut Glaze

3 lb. boneless pork loin
1/2 cup maple syrup
4 tablespoons peanut butter
4 tablespoons butter
1/2 cup white Zinfandel (or other white wine, semi dry)
1 teaspoon grated fresh ginger

Preheat oven to 375 degrees

Score fat on roast into diamonds and place in roasting pan.

Mix together the rest of the ingredients and pour about one half of the mixture over the roast. Bake for 1 1/2 hours, basting frequently with pan juices and remaining maple glaze.

Serve drizzled with pan juices.

Serves 6


Maple Broiled Scallops

4-6 sea scallops per person
1/3 strips of bacon, 1 per scallop
1/4 cup maple syrup
1/2 tsp. horseradish

Mix syrup and horseradish. Wrap each scallop or chicken piece with 1/3 strip bacon and secure with a toothpick. Place on broiler pan, brush with syrup, and broil 3 minutes. Turn, brush, and broil 2-3 minutes more, until bacon is crisp.

Serve hot.

Baked Beans with Maple & Rum: one of our favorite maple syrup recipes to take to a picnic.

4 cups dry navy beans
1 lb. salt pork or ham
1 cup maple syrup
1 cup maple sugar
3 qts. water
1 large onion
1 tbsp. salt
1/2 cup butter
1 tsp. baking soda
1 tsp. dry mustard
4 apples, cored & unpeeled
1/2 cup dark rum

Rinse beans, cover with cold water, soak overnight. Pour beans and water into large pot. Add baking soda and more water to cover beans. Bring to a boil uncovered and boil until some of the skins begin to fall off.

Line a bean pot with thin slices of the pork or ham, pour in beans and water. Roll onion in dry mustard completely and bury it in middle of the beans.

Pour maple syrup and salt over top. Bake at 325°F for 4 to 5 hours. At the start of the last hour, place whole apples on top as close together as possible.

Cream maple sugar and butter together and spread over top of apples. Pour rum over top just before serving.


Maple-Glazed Butternut Squash

1 medium butternut squash, peeled, seeded, quartered, cut into half-inch slices
4 tbsp. maple syrup
1/4 tsp. ground mace
4 tbsp. dark rum
2/3 cup water

Place all ingredients in a large saucepan. Bring to a boil, then simmer for 15 minutes, or until the squash is tender. Reserving the cooking liquid, transfer the squash with a slotted spoon to a heated serving dish. Boil the cooking liquid until it is thickened, then pour it over the squash.

Serves 4

Sweet Potato Tart Glazed With Maple Syrup

Sweet potatoes have a natural affinity for maple syrup...and maple syrup recipes.

2 strips bacon, chopped
1 shallot, minced
6 brussel sprouts, shredded
1 cup chicken stock
4 tart shells, small
2 eggs
1 cup Half & Half
To taste - salt and pepper
1 large sweet potato, sliced very thin, blanched
1/4 cup maple syrup

In a pot, cook bacon until crisp. Remove from pot and reserve. In same pot, place shallots and brussel sprouts. Add chicken stock and cook until evaporated. Add cooked bacon, salt and pepper. Place mixture into freshly baked tarts shells on a sheet pan.

In a bowl, combine eggs and half & half. Pour mixture into tart shells. Arrange sliced sweet potatoes on top of tart shells. Brush maple syrup on top and bake in a 350 oven for 15 minutes, basting twice with syrup.
